Epic Eats – Mushroom Barley Pilaf and Arugula Salad

Mushroom Barley Pilaf –120 calories/ serving, 2 g fat, 0 g saturated fat,0 g added sugars, 2 g protein 

Arugula Salad- 20 calories/ serving, 3.2 g fat, 0.5g saturated fat, 2 g of added sugars, 0.6 g protein 

Pumpkin Brownies- 72.4 calories/ serving, .7 g fat, 0 g saturated fat, 11.1 g added sugars, 0. 9 g protein 

 

 This meal service offers a lot of minerals, macronutrients and vitamins. 

The mushroom barley pilaf is a common vegetarian dish during a lot of holidays. Most seen paired up with duck, turkey, and game hens on holidays. But nobody takes into consideration the amount of energy this dish can give you!  

It’s low in protein and fat but it’s loaded with carbohydrates which are sugar molecules. They are one of the three main nutrients found in food and drinks. Your body breaks down carbohydrates into glucose.Glucose, or blood sugar, is the main source of energy for your body’s cells, tissues, and organs. 

The mushroom barley pilaf isn’t the only dish filled with great nutrients! The arugula salad is a low-calorie side dish, but it can bring a lot of flavors to your meals.  

Arugula is used as a leaf vegetable for its fresh, tart, bitter, and peppery flavor. Arugula pairs well with hearty grains and small pastas such as wild rice, and whole wheat couscous.  

This arugula salad will be packed with feta cheese, cherry tomatoes, walnuts, red onions, and cranberries to add flavor and offer many vitamins and minerals. Arugula is dense in vitamin A which is important for normal vision, the immune system, and reproduction.  

Vitamin A also helps the heart, lungs, kidneys, and other organs work properly. Arugula also offers minerals like calcium which helps blood to clot normally. As well as potassium, minerals and an electrolyte that’s vital for heart and nerve function. 

This meal service will also have a great delicious dessert to fulfil that sweet tooth! Pumpkin brownies are not only delicious but sets the spooky season vibes October always gives off. This meal is loaded with energy and it’s great for anyone that is looking for a light meal or is following a vegetarian diet!
